Wild caviar

Farmed caviar
Genuine caviar is the roe of freshly caught female sturgeon, and Friend & Burrell currently carry both wild and farmed caviar. As far as we know, no-one else in Australia has legal wild caviar - ours is imported under Australian Government CITES Number 2006-AU-471002.
Caviar must be kept chilled, preferably between -1 and +2 degrees C but never frozen. Unopened jars or tins may be kept in a refrigerator for several weeks but, once opened, should be consumed within a few hours.
Wild Caviar
Presently we have available from the Caspian Sea, Sevruga (Acipenser Stellatus) and Oscietra ( Acipenser gueldenstaedtii colchicus) and also known as asetra, oscetra, ossetra, and ossetrova.
Our current stock has a shelf-life to end December 2007.
Sevruga caviar is a light gray to dark gray/black in color and has a very buttery, smooth flavor. This is the smallest grained caviar that comes out of the Caspian Sea.
Oscietra caviar has nice firm medium-sized eggs, a delicious and unique nutty flavor and a beautiful shiny appearance, with variations of color from light brown to gray and shades of green.
Farmed Caviar
Caviar of farm-raised Ossetra Acipenser Baerii (Siberian Sturgeon). This fresh product comes from wild-caught Siberian sturgeon raised on aquafarms that are regulated with respect to animal welfare, health and the environment. The large black grains have a delicate nutty flavour. Our current stock has a shelf-life to end December 2007.
